Strawberry Jam without pectin is simple and easy to make. Our old fashioned homemade strawberry jam has only two ingredients: strawberries and sugar! Great taste and Recipe included.
Homemade Strawberry Jam Recipe - no pectin:
Equal parts of crushed strawberries and sugar
We show you the old fashioned of how to make and can strawberry jam. It's very easy to make and simple to can in mason jars. Enjoy the bounty of summer strawberries even during the winter!
Note: An example recipe of 6 Cups crushed strawberries and 6 Cups of sugar will require (6-8) 8 oz mason jars (jelly jars) for canning.

And some people reboil they say the lives do not have to be anything heated the jars do not have to be sanitized just hot so they don't crack when you put the gem in this is America's Test Kitchen and then after you put the jam and you don't have to crank down the ring fingertight they say so oxygen can escape and then reboil the whole thing for 10 minutes I guess the push more air out to ensure a vacuum pool on the lid I don't know I think all of this is overkill what do you think I'm asking you wrenchman 55 at yahoo.com

Hi. This method that I use is the open kettle method that was once the recommended method before water bath. Open kettle canning was used for generations before the canning police deemed it not recommended. That doesn’t mean that it’s unsafe when done correctly. I personally think that finger tight could potentially be the reason for all the failures of seals while folks are water bath canning. That’s a thought not necessarily fact because I have never water bathed anything. Thanks!

Fun fact: This is the same method I use to make Strawberry Sundaes. Cut & mash the strawberries & add sugar then pour over ice cream. You can use any berries really. It's so good.

Thanks! If you have a jar that doesn’t seal, you can re-heat and re-can in a clean jar with new lid. The main key about open kettle canning is to place the hot product into the hot jars quickly after turning off the heat source, get the lids on, and turn the jars over for 5 minutes. Of course I also wipe off the rim of the jar during this process. I follow this rule and I honestly never have a jar that doesn’t seal.

After coring and smashing the strawberries I added the sugar. Before turning on the stove to cook the mixture I had to run an errand that could not wait. I was gone for an hour. I came home and finished the process of making the jam. Will the jam still be good given the hour delay in cooking?

Hi. Yes, that’s how I would do it. You could try a small batch first just to make certain it’s to your liking. Pretty much strawberry, blackberry, and raspberry should all work the same as far as sugar content when making jam. Thanks!

Hi. I have several videos on jams, jellies, marmalade, etc on our channel. Just a heads up: I know I call that the oven method but it’s really just the old timey open kettle canning method that was once the recommended method before water bath became recommended. It got termed the oven method around the house but it’s not really the oven method. The simple key to open kettle canning is to place the hot jam/jelly into the hot jars quickly and get the lids on. All the best canning and don’t hesitate to ask if you have questions.

Hi. No I didn't use lemon juice. I do remember us saying we need to reshoot that part of the video because the lemon was in it. I think I was getting some help from my sweet wife that thought I used lemon. Hint...I'm the jam maker :) You are the only question that we ever received about the lemon. Nice catch!!

Hi. Yes you can reduce the sugar. The jam may not be as thick but it will get close. Once you get the berries crushed, add sugar to your taste. I would try a small batch first to see how it goes. All the best and let us know your jam turns out with less sugar. Thanks!

I make sure the jars are clean. I normally will run them through the dishwasher or wash them by hand. The need to be in the oven for 15 minutes which is why I normally show to get the jars in the oven before you start the process of making the jam.

Dividing it all out the recipe would be: 2 cups crushed strawberries 2 3/4 cups plus one teaspoon sugar 1/2 package of sure jell Should make about 3 or 4 jelly jars.

Great video. I live in the UK and I only ever do my jam this way but I do add the pectin. That's getting harder now cause you just can't buy pectin right now. I know I could just make my own but seriously, with all the other things I have to do There's just not enough time for that. Will try it without the pectin but I have reservations. :)

I think cooking the meat and then 250 deg in the oven would be safer than water bath. My issue is that I haven’t performed this method so I really don’t know and can’t recommend it. It absolutely seems like it would work. If I can find the comment, I will get the lady’s name that was doing the oven method @ 250.

Useful Knowledge ok here’s a question...what if you fully cook your meat in the oven then transfer it to your jars then use the water bath method to seal the meat in the jars...will that work? It’s hard buying pressure canners here in the uk. Not may about and they are too expensive!

marina agathangelou. I understand. I had a lady post that she did can chicken at 250 deg F. I think she said for an hour. Honestly, I would get a pressure canner to be safe. They are really not that difficult to work. If you purchase a newer one , they are very safe. I cover the bottom of the cooker with water, place in the jars, put the lid and weight on, then just slowly heat it up until you reach 10 psi. Then all you do is adjust the heat to keep it at 10 psi. Also, check into some of the already freeze dried meat. I have friends that swear by the freeze dried meat.

Gigi Loveall. Thanks!! I did find out that the method that I was taught as a child is called the “open kettle” method. I changed from heating the jars up in hot water to heating them up in the oven. That’s where it started to get called the oven method around my house. It still works for me. I just made strawberry jam this weekend.

ajtheown. Hi. Great question! Honestly it’s probably because my fingers are a little numb to the heat since I have canned, cooked, baked, and grilled my entire life. The jars are definitely still hot. The jam has to be about 200 deg or it will not can like this. Most old canning books say “immediately ladle into jars and seal”. Thanks!!

Hi. My rule of thumb for soups is to make them fresh from my canned tomatoes. The reasoning is that ingredients added to make the soup such as potatoes or beans can reduce the overall acidity of the soup and require pressure canning.

Hi. Actually yes you can. If the jam is too thick you can put the jam back into the pot and add a small amount of water per 8oz jar. If memory serves, it’s a tablespoon of water per jar. Slowly heat it back up and cook it until it’s ready. Place in hot clean jars with new lids.

Debie Sims. Thanks! The is the old timey open kettle method that works perfectly for jams, jellies, marmalade’s, preserves, and tomatoes (anything considered acidic). The main secret to open kettle canning is to place the hot product into the hot jars quickly. The old Southern Living canning books say “immediately”. All that means is don’t let it cool down and then put it in the jars. Best of luck canning.

Question: my jam didn’t thicken up like my blackberry jam did. Can I take the strawberry jam soup I did make and boil it more to get it thicker or do I need to start over?

Hi. Yes, just heat it up slowly back to simmering. You will need to wash up the jars and bands. You will need to use new lids. Sometimes this will happen.

Kathy Giannakopoulos. Hi. The sugar and pectin in the suit reacts to gel. Less sugar most likely would not gel correctly and you would have strawberry sauce. It would still be really really tasty be wouldn’t gel to be jam. It would be really good on pancakes!

Waiting for the lids to "ping" now :0) My mom and I are going to try elderberry jam making this Labor Day weekend using pectin and lemon juice. The Knitted Lamb. Thanks! I’m really not sure about elderberries. I can’t even find anything in any of my old canning books. I understand that they are not very acidic. You will most likely have to use pectin and some lemon juice to lower the ph.

Krystal Morris. I have two of the pots in the video. I think they are 6 quart. I also have a 3 quart size. I use them all a lot. If you are ever near South Pittsburgh, TN, it’s worth a stop at the Lodge Factory store.

Sarah Mcnutt. Hi. Yes, I use this canning method for all of my jams and jellies. As far as the 1:1 fruit to sugar ratio, it can be used for strawberry, blackberry, and raspberry jam. Best wishes.

A slight dent in the middle usually means that they are sealed. If you press the middle and it does not pop back up, then its sealed. Check out our video on how to make sure your jars are sealed: azposts.info/soft/oKerY2HRjY56mqI/video.html

I know one did because it’s totally flat. I can’t tell about the others. You can see a dent on where the little capsul is.. the other one that for sure seal is like totally flat and solid. The others are solid but there’s like a dent in the center.

Hi. The jars need to be in the oven for at least 15 minutes before you put the jam in the jar. The Dollar Tree jars should work as long as they are "Mason" jars. Just make sure they are labeled "Mason". Since its your first time to make jam, my best tip is to be patient and cook it slowly. Best of luck!!

Hi Chrisia. Thanks! Pectin really doesn't contribute to the canning part of the jam. Strawberries are acidic which makes them easy to preserve because botulism can't live in an acidic, high sugar environment like jams and jellies. You can make strawberry jam with or without pectin because strawberries contain natural pectin. The way shown in the video is an old timey way to make strawberry jam. It contains less sugar than jam made with pectin. The down side is that it takes longer to cook. If you follow the video and can the jam, it will not require refrigeration. Just make sure the jars are sealed. You will hear a ping when they seal. so go ahead and get ready to mail your Mom some jam. Best of luck and don't hesitate to ask if you need help.

pectin is naturally found in ripe fruits. It's just the setting agent. If you are using ripe, in season fruit you should have enough pectin naturally combined with the sugar. You can also add some lemon juice. If you aren't going through the canning process to create that seal, then store the jars in the fridge or freezer.

Hi Sandy. Strawberries are acidic (3.0-3.9 on the ph scale). The sugar does somewhat act as a preservative in jams but I see no reason why making them with less sugar will make the preserves unsafe. You will still have some sugar. The main thing to know is that the acidity of the fruit will still be there which will prevent botulism, etc. Best of luck.

Hi. The recipe is one of those handed down recipes that is 1:1 ratio of fruit to sugar. You can definitely try a recipe with a reduced sugar. I suggest making a small batch first to see how it taste and how well it gels. Maybe a try cup of crushed strawberries and 1/2 cup sugar as a start. Just cook it slow. Best of luck!

Good morning, I made a batch of jam last night and when I got up this morning and turned the jar side ways it is not firm is hard to explain it is loose texture not watery but not firm is that ok ? I boiled it constant stirring for 45 mins what should I do? thank you. :)

The reason you can do this without pectin is the greenish white tips on the strawberries. Do not cut that off. That is your pectin.

Shelley St.Clair. Hi. Sometimes homemade jam (especially jam without pectin) can do this. My blackberry jam from last year did this. I sometimes wonder if it’s the difference in water in the berries from different years or it could have needed just a few more minutes cooking. Try placing the jar in the fridge and see if it firms up enough when cold to spread nicely. If it is still to thin, you can slowly heat it back up to a boil and cook it for a few more minutes. You will need new lids, clean jars and do the process of canning over. My BB Jam was thick enough out of the fridge so I did not cook it any extra. Hope this helps.

I’ve never made any type of jam. I decided that I would maybe try my hand at making homemade jams this year and since I’ve been so infatuated with your cooking tutorials these past 2-3 months I’ve decided that I would just stick with your jam recipe too. Other channels I’ve watched for strawberry jam just seem to have so many steps that I became uninterested with them (thank you so much for a more simple & much better way of teaching this useful knowledge for preparing strawberry jam 😁 no pun intended!!!!!!!

Darlene K. I sent three jars of jam and jelly to Spain. They came back due to a customs issue. We ate them. So no issues sending them out of state. Just wrap up good. Best of luck!!

Darlene K. Hi. Once the jar seals, they will last at least a year at room temp. I opened a jar of fig preserves from last year two days ago. They were great. Just refrigerate after opening.

I was a bit warry of this method but decided to try it last year. I made about 24 pint jars. The jam was fabulous. My grandkids loved it. The 24 jars were all eaten up in 10 months. No problems with spoilage at all, which I was watching for very closely. I'm back watching this video again and making more. Thank you
